We Made a Costco Chicken Bake Recipe, and It’s Even Better Than the Food Court

While Costco is home to plenty of great deals, your Costco membership is so much more than that. For many, the Costco food court is the destination. With giant Costco hot dogs, huge slices of Costco pizza and delicious sundaes, the food served up at Costco is incredibly tasty.

Another favorite? The Costco chicken bake. Made with chicken, cheese, bacon and Caesar dressing, this Costco favorite is served up warm. It’s similar to a Hot Pocket or a calzone but with a way better filling. Essentially, it’s a cross between a pizza and a chicken Caesar salad, using only the best ingredients of the two, to make the ultimate portable meal. And once we stumbled upon the recipe for how to make them, we knew we have to try it out for ourselves.

With just five ingredients, you’ll have this food court favorite on the table in no time.

Ingredients

  • 1 pound store-bought or homemade pizza dough

  • Caesar dressing

  • 1-½ cups chopped rotisserie chicken or cooked boneless chicken breast

  • 1 cup bacon bits

  • 2 cups shredded mozzarella cheese

Step 1: Roll the dough

Preheat the oven to 350°F. Divide the dough into four and roll out each piece into a rectangle.

Step 2: Dress the dough

Use a pastry or basting brush to generously brush the dough with Caesar dressing.

Step 3: Fill the dough

Sprinkle chunks of chicken in the middle of the dough. Top with bacon bits and shredded cheese.

Step 4: Roll the dough

Roll the dough starting with the long side. Roll it up into a log and pinch the ends to seal it.

Step 5: Brush and bake!

Brush each of the chicken bakes with additional Caesar dressing and sprinkle with cheese. Bake for 20 minutes until golden.

The Costco food court is always an experience, from the giant, cheesy slices of pizza to the super-satisfying hot dogs all dressed up with your favorite toppings. A true Costco classic, the chicken bake, offers its own experience. Biting into that piping hot pocket filled with chicken, melty cheese and plenty of flavor thanks to the Caesar dressing is truly delicious, and this is the perfect way to recreate it at home!

These taste very similar to Costco’s original chicken bake. By using the rotisserie chicken, you get much of the same salty flavor, only for it to be enhanced by the creamy dressing and the cheese. The main difference here is the pizza dough. Costco’s chicken bakes are made with the company’s signature pizza dough. It’s the same dough that makes us love their pizza crust so much, so it’s tricky to replicate. But with a store-bought or homemade pizza dough option, it’s still perfectly delicious. It’s the ideal pocket filled with everything you could want to make your favorite comfort food without having to leave the house.
