How To make Beef Patties

  1. To make the pastry, sift together the flour, curry powder, turmeric, sugar, salt, and baking powder in a large mixing bowl. Add the cold butter, shortening, and mix with your hands, until the mixture resembles coarse crumbs. Slowly add the buttermilk, mixing until the dough comes together. Set aside and chill for an hour in the fridge.

2. Knead the dough on a floured surface for a few minutes until it’s smooth and elastic. Add in 2 tbsps of shortening and small pieces of cold butter. Fold, and roll out with a rolling pin. Divide the dough into 12 equal-sized balls and flatten each into a disc shape. Chill for 15 minutes.

3. While the dough is chilling, you can make the filling. In a large skillet, cook the ground beef over medium-high heat until browned. Add the onions, scallions, ginger, garlic, and shredded carrot. Stir well and cook for a few minutes until the vegetables are tender. Add the salt, allspice, garlic powder, ground ginger, and black pepper. Mix well and let it simmer for around 10 minutes until the liquid has evaporated and the mixture is thick. Add the browning, oyster sauce, and soy sauce.

4. Take the dough discs out of the fridge and roll them out on a floured surface until they’re about 1/4 inch thick. Place a heaping tablespoon of the beef filling on one half of the dough disc, leaving a little space around the edges. Fold the other half over and crimp the edges together using a fork.

5. Place the patties on a lined baking sheet and chill in the fridge for 30 minutes. Preheat the oven to 400°F. Take the patties out of the fridge and brush them with a beaten egg. Bake them in the preheated
